Courgette soup with fresh mint/ Crema de calabacín con menta fresca

As you know, I am a huge fan of warm soups, especially during winter time. The courgette soup is one of my favourites and it has been always prepared at home. However, I wanted to give it a twist and prepare it with some extra ingredients

Ingredients:

  1. 2 courgettes
  2. 1 onion
  3. 1 piece of celery
  4. 1 potato
  5. some feta cheese
  6. some mint leaves
  7. salt and pepper

 Preparation:

  1. We’ll start cleaning and peeling (onion and potato) the vegetables and cutting them into pieces. We will boil them with a pinch of salt
  2. Once they’re cooked, we will put them into the food processor with some water used to boil them and we’ll triturate them
  3. We will then add some pepper, the mint leaves and the feta cheese, and we will triturate it all again
  4. We will need to correct salt and ready!

As you see, very easy and ideal for dinner. It will taste great with some pumpkin seeds on it.


 

Ya sabéis que soy una gran fan de las cremas y sopas calientes, sobre todo en invierno. La crema de calabacín es una de mis favoritas, y que siempre se ha preparado en mi casa, pero esta vez quise hacerla con algunos sabores extra, para darle un toque distinto.

Ingredientes:

  1. 2 calabacines
  2. 1 cebolla
  3. 1 trozo de apio
  4. 1 patata
  5. 1 trozo de queso feta
  6. unas hojas de menta
  7. sal y pimienta

Elaboración:

  1. Empezamos lavando y pelando (cebolla y patata) bien las verduras y cortándolas a trozos. Las ponemos a hervir con sal
  2. Una vez estén bastante blandas, las pondremos en el procesador de comida con un poco del agua con la que la hemos hervido y trituraremos
  3. Añadimos entonces, la pimienta (al gusto), las hojas de menta y el queso, y volvemos a triturar. ¡Corregimos de sal y listos!

Ya veis, una crema super fácil de hacer pero que nos sienta genial para cenar. Unas pipas de calabaza por encima, le quedarán estupendamente
